大頭菜&曹賣饅頭 Steamed Daisy Mae & Turnip Bun

150g 中筋麵粉


90ml 溫牛奶

1/2大匙 植物油

1/4茶匙 泡打粉

1/2茶匙 酵母粉


1茶匙 南瓜粉

1/4茶匙 甜菜根粉

1/4茶匙 可可粉



150g All-purpose flour

1Tbsp Sugar

90ml Warm milk

1/2Tbsp Vegetable oil

1/4tsp Baking powder

1/2tsp Yeast

{Color Powder}

1tsp Pumpkin powder

1/4tsp Beetroot powder

1/4tsp Cocoa powder

作法 Instructions

1. 將麵粉、糖、酵母粉、溫牛奶、植物油全部放入攪拌盆中。電動或手動攪拌10分鐘至麵團表面光滑不會沾黏。

1. Combine flour, sugar, yeast, warm milk, and vegetable oil in a mixing bowl. Electric or hand mixing for 10 minutes until the surface of the dough is smooth and not sticky.

2. 將麵團分割成4大4小,其中2份麵團大麵糰、3份小麵團用調色,用南瓜粉、甜菜根粉和可可粉調成彩色麵團。

2. Divide the dough into 4 large pieces and 4 small pieces. Color 2 large pieces and 3 small pieces with pumpkin powder, beetroot powder and cocoa powder.

3. 調色的同時反覆搓揉麵團排氣,滾成光滑圓球後,蓋上保鮮膜防止乾燥。'

3. Knead the dough repeatedly. Roll into 8 smooth balls and cover with plastic wrap to keep them from drying out.

4 .將麵團裝飾,捏塑成曹賣&大頭菜造型。

4. Decorate with colored dough and form into the shape of Daisy Mae & Turnip Bun.

5. 鍋底倒入熱水後不開火,蒸籠放在鍋上,蓋上蓋子發酵20分鐘,直到麵團膨脹至1.5倍大。

5. Pour hot water into the bottom of the pot and put the buns in the bamboo steamer. Cover with lid and ferment for 20 minutes until the dough expands to 1.5 times larger.

6. 發酵完成後,開中大火蒸15分鐘。

6. After the fermentation is completed, steam over medium high heat for 15 minutes.

7. 熄火,不要打開蓋子,降溫10分鐘。

7. Turn off the heat and let it cool down with the lid on for 10 minutes.

8. 降溫後,即可開蓋取出蒸好的饅頭。

8. After cooling down, open the lid and take out buns.

9. 用菜葉裝飾在大頭菜的饅頭上,可愛的饅頭就完成囉。
