台灣味瓜仔肉燥飯 Taiwanese Minced Pork Sauce with Pickled Cucumber

Taiwanese Minced Pork Sauce over Rice is a classic comfort food which can be found in almost every Taiwan’s family. Today, let’s make this one-skillet dish with a secret ingredient, “Bull-Head Shallot Sauce” to enhance the flavor. You’ll enjoy this savory, aromatic and hearty Taiwanese staple!





食材

洋蔥 ½ 顆, 切碎

蒜 10瓣, 切末

青蔥 2根, 切碎

香菜1小把, 切碎

豬絞肉 650g (23 oz.)

醃脆瓜 230g (8.1 oz.), 切碎

醃脆瓜汁 150 ml (5 fl. oz.)

油 3大匙

牛頭牌紅蔥醬 1大匙

米酒 1大匙

醬油 2大匙

白胡椒粉 ½ 茶匙

鹽 1茶匙

水 2杯 (480 ml)

冰糖 55g (2oz)


Ingredients

½ Onion, chopped

10 cloves Garlic, minced

½ cup Chopped Green Onion,

½ cup Chopped Cilantro

23oz Ground Pork (650g)

8oz Chinese Pickled Cucumber In Soy Sauce (230g)

5 fl. oz Pickle Juice (150 ml)

3 Tbsp Oil

1 Tbsp Bull-Head Shallot Sauce

1 Tbsp Rice wine (White Wine)

2 Tbsp Soy Sauce

½ tsp White Pepper

1 tsp Salt

2 cups Water (480 ml)

2oz Rock Sugar (55g)



作法 Instructions


1. 鍋中加入3大匙油,加入洋蔥和紅蔥醬拌炒3分鐘

1.Heat the oil in the skillet, add onion and Shallot Sauce to stir-fry for 3 minutes.


2.加入豬絞肉、蒜末拌炒3分鐘

2.Add ground pork and garlic, stir fry for 3 minutes.



3.加入青蔥、香菜、米酒、醬油、白胡椒和鹽

3.Add green onion, cilantro, rice wine, soy sauce, white pepper and salt



4.加入切碎的脆瓜、醃脆瓜汁、水和冰糖

4.Add chopped pickled cucumber, pickle juice, water and rock sugar.



5.稍微攪拌均勻後,蓋上鐵鍋鍋蓋,以中小火煮20分鐘

5.Lightly stir and cover with a lid, simmer over medium-low heat for 20 minutes.



6.熄火後,不要開蓋,繼續悶煮10分鐘

6.Turn off the heat, let sit with a lid for 10 minutes.



7. 瓜仔肉燥完成後可以淋在白飯上一起吃,超下飯唷!
